    OCTOPUS Carmen Rosa style

    The octopus, once clean, must be frozen by placing it in the freezer for a couple of days.

    • Should the octopus be a large one, it will be cooked Galician style.

    Ingredients:

    1 Octopus large

    1 onion

    1 can of beer

    Water

    Marine Salt

    Olive oil

    Paprika

     

    Method:

    Boil the octopus in a pan with some water, a can of beer and a quartered onion. Once it starts bursting, add the whole octopus which will change its natural colour when its ready. Poke to check its tenderness and strain when ready. Slice up and serve topped with the salt, paprika and a dash of olive oil.

     

    • When the octopus is small: with potatoes

    Ingredients:

    1 small octopus

    1 onion

    1 pepper

    Potatoes

    Garlic

    Olive oil

     

    Method:

    Stir-fry the onion, pepper and garlic on olive oil. When it is tender, add the octopus sliced and the potatoes. Once the potatoes are ready, remove from heat, allow five minutes to cool down and serve.
