Ingredients:
- 1 fish head and tail
- 1 onion
- ½ green pepper
- 1 garlic clove
- 1 ripe tomato
- Rice
- Peppermint leaves
- Cumin (powder)
- Water
- Salt
- Saffron powder
- Olive oil
Method:
- Chop and stir-fry the tomato, onion, garlic, and pepper. Sweat gently until soft. Then add the fish and cook it jointly for a couple of minutes.
- Add water so you soak the fish and vegetables and add a pinch of salt, the peppermint leaves, the cumin and a pinch of saffron.
- Simmer for 20 minutes.
- Then remove from the heat, strain the stock and save a bowl for later. Add a handful of rice and heat up the stock again until the rice is tender.
