    FISH Soup

    Ingredients:

    • 1 fish head and tail
    • 1 onion
    • ½ green pepper
    • 1 garlic clove
    • 1 ripe tomato
    • Rice
    • Peppermint leaves
    • Cumin (powder)
    • Water
    • Salt
    • Saffron powder
    • Olive oil

    Method:

    • Chop and stir-fry the tomato, onion, garlic, and pepper. Sweat gently until soft. Then add the fish and cook it jointly for a couple of minutes.
    • Add water so you soak the fish and vegetables and add a pinch of salt, the peppermint leaves, the cumin and a pinch of saffron.
    • Simmer for 20 minutes.
    • Then remove from the heat, strain the stock and save a bowl for later. Add a handful of rice and heat up the stock again until the rice is tender.
